Chickpea salad sandwiches are great to serve for parties, picnics or for a lunchtime meal. Similar to a traditional chicken or tuna salad sandwich, this version, made with smashed chickpeas, has amazing texture and taste. If you want to personalize the recipe, you have several options. Oh, baby
Last weekend I traveled to be with my family to celebrate with a baby shower for my younger sister. Unfortunately, at the last minute, it was decided that my sister couldn?t fly to be at her own shower. What a bummer! But we didn?t let that stop us from having the party (and we Skyped her in when it was time to open gifts)!
The day before the shower, after some visiting and chit chat, one of my cousins, my older sister, my mom and I got down to business. We were getting party favors ready (check out these cute favors from Scissors and Spatulas that I ordered for the shindig). We were prepping salads and sandwiches, setting tables and folding napkins.
Chick, chick, chickpeas
As I helped stuff the chicken salad into croissants, all I could think was, ?I want a sandwich made with a yummy croissant!? So I decided to make a sandwich spread that didn?t include chicken ? enter chickpea salad sandwiches.
The chickpea salad sandwiches looked like the chicken salad version, but tasted quite different. I?ve made this salad a few different ways. For this version I added celery and green onion. Other times I haven?t, but I?ll add salad greens and sliced tomato to top the sandwich. The choice is yours. I?ve thought about other options, too, like adding dried cranberries and slivered almonds, or maybe curry powder. It all sounds good, doesn?t it?
Of course we had a lot of leftovers from the shower (my Italian family always makes more than needed!). When the rest of my family got together the next day, we made more food, served leftovers, and sat on the deck eating, chatting and visiting.
Babies, family and good food were the focus of the weekend, so it made sense that even my 8-month old, great niece liked the taste of my chickpea salad sandwiches!
